30 Minutes or less. Similar kind of meal to the Tacos but not the same. Once again we are using Tesco’s ready to to packs to help us out. Great to share in a single super big meal or as usual store as meal prep. This produces 3 portions.


1 Tescos Nachos Pack

1 Onion

1 Pepper

1 Pack of Tescos Vegan Mince

Vegan Cheese 200g

1 Tin of beans


  1. Heat up a large non stick pan with oil and add the vegan mince.
  2. Cut up the onions and peppers while the mince is heating up.

  3. Add the veg and spices from your own collection if you wish.
  4. After the mince and veg have all cooked through add a whole can of beans. Heat again until beans are also cooked.

Note – At this stage if you are prepping this for later you need to stop and store the mix you have created in a plastic tub suitable for the fridge or freezer.

5. Grate up your cheese. Now if preparing to eat you can start layering up your bowl. Stack in appropriate portions in this order.

At this point your bowl is ready to microwave for around 2-3 minutes depending on power.

Keep an eye on it and make sure it doesn’t burn the nachos.

From this point you are free to enjoy! Remember to add your own extras like jalapeno peppers and guacamole.

Great meal for when you want to sit down and pick at something savoury and macro balanced.
